lime bars recipe

for when your housemates are like "oh let's throw a halloween party! :) with tequila shots and a punchbowl" and buy a pound of limes (a POUND of LIMES) that are still sitting on the counter three weeks later

time: 1.5-2 hours
feeds: optimally, a whole friendsgiving's worth of people. minimally, you plus your housemates

preheat oven to 350°F
grease the bottom of a ~9"x12" baking dish (i just use the end of a stick of butter, like it's some chunky, slippery chalk)

in a big bowl, combine:

  • 2 cups flour
  • 1/2 cup powdered sugar
  • a splash of salt
    with clean hands, mix in:
  • 1 cup butter (yeah i goggled at that, too, but as paula deen as it feels, you're still a few steps away from racist orange disaster)

mixture should feel like almost-crumbly playdough
pat into the baking dish
bake for 10 minutes

in a bowl, combine:

  • 4 eggs
  • 1/3 cup lime juice (3-4 limes)
  • as much zest as you think will be pretty
  • 1/4 cup flour
  • 2 cups white sugar
  • a splash of baking powder
    don't overbeat it because the eggs will get cloudy and you won't get the translucent jelly-like look of lime bars (though that's just an aesthetic choice -- if you cover the final result in powdered sugar, nobody will notice)

goosh it over the slightly-baked crust
bake for 25 minutes or until a fork inserted into the filling comes out clean

remove from oven
let fully cool before sifting powdered sugar on or trying to cut it (this will take 1-2 hours)
